Gluten-Free Raw Samoas

Gluten-Free Raw Samoas
1 cup dates (I use Sunsweet)
1/4 cup unsweetened shredded coconut
1/8 tsp. pure vanilla extract
less than 1/4 tsp salt
3 T. chocolate chips

Blend all ingredients in your food processor, chopper, or blender.  You may need to scrape down the sides a few times or scrape the dough out of the blades to completely mix.  If too sticky, add more coconut.  Roll into balls and flatten slightly. Drizzle with extra melted chocolate, if desired.
